Dijon Pork Chops and Potatoes

Dijon Pork Chops and Potatoes make such a versatile dish! Leave out the pork chops and it’s a tasty side dish.

Ingredients

  • 6 boneless pork chops
  • 1 (10.75 oz.) can condensed cream of mushroom soup
  • 1/4 cup chicken broth
  • 1/4 cup Dijon mustard
  • 2 cloves garlic, minced
  • 1/2 tsp. dried thyme
  • 1/4 tsp. salt
  • 1/4 tsp. freshly ground black pepper
  • 6 red potatoes, cut into bite sized pieces
  • 1 onion, sliced
  • 1 Tbsp. olive oil
  • 3 Tbsp. flour
  • 1/4 cup water

Instructions

  1. In a large bowl, mix cream of mushroom soup, chicken broth, mustard, garlic, thyme, salt and pepper. Stir in potatoes and onions and place in slow cooker.
  2. Heat oil in a large skillet over medium-high heat. Season pork chops with salt and pepper and brown on both sides. Place pork chops on top of potato mixture and cook on low for 4 to 6 hours.
  3. For thicker sauce, mix flour and water in a small bowl. Turn slow cooker to high heat, remove pork chops and stir flour mixture into potatoes. Place pork chops back into slow cooker and cook on high for an additional 15 to 20 minutes until sauce is thick.
