Sheet Pan Pork Chops and Potatoes

With this recipe for Sheet Pan Pork Chops and Potatoes, you can have dinner ready in under one hour, using just one pan! It’s the perfect meal for a hectic school weeknight.

 

You will need, 1 (.6 oz.) packet Italian dressing mix,  1 tsp smoked paprika, 1/2 tsp garlic powder, 1/2 tsp Italian seasoning, 2 tbsp grated Parmesan cheese, 1/4 tsp salt, 1/4 tsp freshly ground black pepper, 6 (4-6 oz.) sliced quarter loin pork chops, 3 tbsp olive oil, 4-5 Idaho potatoes, peeled and chopped into 1-inch pieces, 1 ( 1 lb bag) baby carrots.

Preheat oven to 400º. In a small bowl, combine dressing mix, paprika, garlic powder, Italian seasoning, Parmesan cheese, salt and pepper.Sprinkle seasoning over both sides or each pork chop and place on a baking sheet lined with foil and coated with nonstick cooking spray. Repeat with remaining pork chops. Add the potatoes and carrots to the sheet pan. Drizzle with olive oil and sprinkle with remaining spice mixture. Toss lightly to mix together. Bake for 35-40 minutes, or until pork shops are fully cooked.
