Scallops with Jarlsberg Cheese Sauce

Ingredients

  • 2 cups grated Jarlsberg cheese
  • 3/4 cup mayonnaise
  • 1/4 cup milk
  • 1 tsp. lemon juice
  • 1/4 cup minced onion
  • 4 Tbsp. butter
  • 2 lbs. fresh or thawed sea scallops
  • 4 oz. heavy cream

Instructions

  1. Gently combine Jarlsberg cheese, mayonnaise, milk, lemon juice and onion. Refrigerate for 2 hours.
  2. Heat butter in a skillet. Add sea scallops and sauté for 5 to 7 minutes, until opaque. Remove scallops to a plate.
  3. In the same skillet, add heavy cream and cheese mixture. Wisk until blended into a creamy sauce. Add scallops back into the mixture. Heat for 1 minute, until bubbly. Serve over rice or pasta.
  4. * After combining cheese, mayonnaise, milk, lemon juice and onion, this can be served as a dip with crackers or veggies.
