Baked Parmesan Sweet Potatoes
Baked Parmesan Sweet Potatoes are the perfect fall side dish. Double or triple this recipe if you’re feeding a crowd.
Ingredients
- 2 sweet potatoes, peeled and cubed
- 4 cloves garlic, minced
- 1 Tbsp. olive oil
- 2 Tbsp. butter, melted
- 1/2 tsp. garlic salt
- 1/3 cup grated Parmesan cheese
- 1/2 tsp. Italian seasoning
- 1/4 tsp. dried parsley
Instructions
- Preheat oven to 400º.
- Place garlic, oil, butter, salt, Parmesan cheese and Italian seasoning in a resealable plastic bag and mix well. Add sweet potatoes and shake until well coated.
- Place aluminum foil on a baking sheet and lightly spray with cooking spray. Place sweet potatoes onto sheet and spread out evenly. Bake for 18 to 22 minutes. Sprinkle with parsley and serve warm.
