Chicken Cordon Bleu Casserole

Chicken Cordon Bleu Casserole

Stay warm with chicken cordon bleu casserole. Perfect for these cold nights. Add in peas if desired.

Ingredients

  • 1 large rotisserie chicken, cooked and pulled
  • 1/2 lb. sliced forest ham, roughly chopped
  • 1/2 lb. sliced Swiss cheese
  • 1 stick butter, divided
  • 4 Tbsp. flour
  • 2 1/2 cups milk
  • 2 Tbsp. lemon juice
  • 1 1/2 Tbsp. Dijon mustard
  • 1/2 tsp. smoked paprika
  • 1 1/2 tsp. salt
  • 1/2 tsp. freshly ground black pepper
  • 1 1/4 cup seasoned Panko bread crumbs
  • 1/4 cup Parmesan cheese

Instructions

  1. Preheat oven to 350º.
  2. Spray a 9 x 13-inch casserole dish with nonstick cooking spray. Layer chicken on the bottom of the dish, followed by ham and Swiss cheese.
  3. In a medium saucepan, melt 4 tablespoons butter over medium heat. Whisk in flour and cook for 1 minute. Slowly add milk. Turn heat to high and cook until sauce thickens and boils. Remove from heat and add lemon juice, mustard, paprika, salt and pepper. Pour sauce over chicken dish.
  4. In a small bowl, melt remaining butter. Mix in bread crumbs and Parmesan cheese. Sprinkle mixture over chicken dish and bake for 45 minutes. Cool for 10 minutes before serving.
