Spider Cupcakes

Spider Cupcakes

Halloween is here and we are making spooky Spider Cupcakes. These cupcakes are filled with pumpkin!

Ingredients

  • 2 cups flour
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 2 tsp. ground cinnamon
  • 1 tsp. ground ginger
  • 1 tsp. ground nutmeg
  • 4 eggs, at room temperature
  • 2 cups canned pumpkin puree
  • 2 cups brown sugar
  • 1 cup olive oil
  • 1 container prepared icing
  • 20 Oreos
  • 40 eye candies
  • Chocolate syrup

Instructions

  1. Preheat oven to 350°.
  2. Line two muffin tins with paper liners. In a medium bowl, mix together flour, baking powder, baking soda, salt, cinnamon, ginger and nutmeg.
  3. In a larger bowl, whisk together eggs, pumpkin, sugar, and oil. Slowly add the dry mixture to the wet and stir until combined. Divide batter among liners and bake for 20 to 24 minutes, until a toothpick inserted comes out clean. Remove from oven and let cool, then transfer to a wire rack to cool completely.
  4. Spread icing over each cupcake. If ready to serve, place one Oreo on each cupcake. Place small dot of icing on the bottom of two eyes and place on the Oreo. Squeeze chocolate on sides of Oreos to create 4 legs.
