Apple Rosemary Pork Loin

It’s Thanksgiving week! Try these three easy, comfort dishes for Thanksgiving dinner with the family. Apple Rosemary Pork Loin is done in the slow cooker. Fresh rosemary, cinnamon and apple flavors fill this dish.

Ingredients

  • 1 (3 lbs.) pork loin
  • 2 granny smith apples, cored and sliced about 1/4-inch thick
  • 1 cup chicken broth
  • 1/4 tsp. salt
  • 1/4 tsp. freshly ground black pepper
  • 1 onion, sliced
  • 1/2 tsp. ground cinnamon
  • 1 Tbsp. chopped rosemary

Instructions

  1. Place pork loin fat side up on a cutting board. Slice pork loin into slits, about 1-inch apart, deep enough to place apples. Place 2 apple slices into each slit. Place remaining apple slices evenly into bottom of slow cooker.
  2. Pour chicken broth over pork loin. Sprinkle with salt and pepper. Spread onion around pork loin. Add cinnamon and rosemary. Cook covered on low for 8 hours or high for 4 hours.
