Margherita Pasta
Margherita Pasta is done in less than 30 minutes and all done in one pot! Try this delightful Italian dish for dinner tonight.
Ingredients
- 1 lb. pasta
- 2 Tbsp. butter
- 2 Tbsp. olive oil
- 1/4 onion, finely chopped
- 6 Roma tomatoes, chopped and divided
- 4 cloves garlic, minced
- 3 Tbsp. flour
- 1 1/2 cups chicken broth
- 1 1/2 cups milk
- 2 tsp. chicken bouillon
- 1 tsp. dried parsley
- 1/2 tsp. dried oregano
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded Mozzarella cheese
- 2 oz. cream cheese
- 1/4 cup chopped fresh basil
- 1/4 tsp. freshly ground black pepper
- 1/2 tsp. red pepper flakes
Instructions
- Cook pasta according to package directions. Melt butter and olive oil in a large pot over medium-high heat. Add onion and half of tomatoes, sauté for 5 minutes. Add garlic and sprinkle in flour, stirring for 2 minutes.
- Turn heat to low, then slowly whisk in chicken broth and milk, stirring until smooth. Turn heat to medium-high and bring sauce to a simmer. Stir in chicken bouillon, parsley and oregano. Reduce heat to low and add cheeses, stir until melted and combined.
- Stir in remaining tomatoes, basil, pepper and red pepper flakes. Add pasta and stir to coat. Garnish with freshly grated cheese and basil if desired.
