Apple Cider Donuts

Ingredients

  • 2 cups apple cider
  • 3 cups all-purpose flour
  • 1/2 cup whole wheat flour
  • 2/3 cup brown sugar
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 tsp. baking soda
  • 1/4 tsp. cardamom
  • 1/4 tsp. nutmeg
  • 1/2 tsp. cinnamon
  • 1/4 tsp. allspice
  • 2 eggs
  • 1 tsp. vanilla
  • 6 Tbsp. butter, melted and cooled
  • Oil, for frying

Instructions

  1. In a small saucepan, bring cider to a rapid boil. Cook over high heat until reduced in half,
  2. about 12 minutes. Set aside and let cool.
  3. In a large bowl, mix flours, brown sugar, baking powder, salt, baking soda, cardamom, nutmeg, cinnamon and allspice.
  4. In a separate bowl, whisk eggs, vanilla, melted butter and cooled cider. Gradually add wet ingredients to the dry mixture until moistened. Cover and refrigerate for about an hour.
