Chicken Cacciatore

Ingredients

  • 1 box spaghetti
  • 4 boneless, skinless chicken breasts
  • 1/4 cup flour
  • 1/4 tsp. salt
  • 1/4 tsp. freshly ground black pepper
  • 2 Tbsp. olive oil
  • 1 onion, chopped
  • 2 celery ribs, chopped
  • 1 green pepper, cut into strips
  • 1 (8 oz.) carton sliced mushrooms
  • 1 (28 oz.) can diced tomatoes
  • 1 (8 oz.) can tomato sauce
  • 1 (6 oz.) can tomato paste
  • 1 cup dry red wine
  • 1 tsp. dried thyme
  • 1 tsp. dried rosemary
  • 1 tsp. dried oregano
  • 1 tsp. dried basil
  • 3 cloves garlic, minced
  • 1 Tbsp. sugar
  • Grated Parmesan cheese, for garnish

Instructions

  1. Cook spaghetti according to package directions.
  2. Coat chicken in flour, salt and pepper. In a large pan over medium-high heat, add oil and brown chicken on all sides. Remove chicken and set aside.
  3. In the same skillet, add onion, celery, green pepper and mushrooms and cook for 5 minutes. Stir in tomatoes, tomato sauce, tomato paste, wine, thyme, rosemary, oregano, basil, garlic and sugar. Bring to boil, then reduce heat, cover and simmer for 30 minutes.
  4. Return chicken to skillet. Cover and simmer 45 to 60 minutes. Serve over pasta and garnish with Parmesan.
