Spinach Stuffed Salmon

Ingredients
- 1 tsp. salt, divided
- 1 tsp. freshly ground black pepper, divided
- 1 Tbsp. olive oil
- 3 Tbsp. lemon juice, divided
- 4 skinless salmon fillets
- 4 oz. cream cheese, softened
- 4 oz. frozen spinach, thawed and squeezed dry
- 1/4 cup Parmesan cheese
- 4 cloves garlic, minced and divided
- 2 Tbsp. unsalted butter, divided
Instructions
- In a small bowl, combine 1/2 teaspoon salt, 1/2 teaspoon pepper, oil and 2 tablespoons lemon juice. Brush both sides of each fillet with mixture. Cut a slit about 3/4 of the way through each fillet.
- In a medium bowl, combine cream cheese, spinach, Parmesan, 2 cloves garlic, remaining 1/2 teaspoon salt and 1/2 teaspoon pepper. Stuff each salmon with 1 to 2 tablespoons of spinach mixture.
- Melt 1 tablespoon butter in a large pan over medium-high heat. Add salmon and cook until golden, about 6 minutes. Flip and cook for an additional 6 minutes. Remove salmon. Melt remaining 1 tablespoon butter with remaining 2 cloves garlic and 1 tablespoon lemon juice. Serve salmon with garlic butter.
