Mini Meatloaf Two Ways

Ingredients
- 1 1/2 lb. ground beef
- 1/3 cup bread crumbs
- 1/3 cup chopped onion
- 1/3 cup milk
- 1 egg, beaten
- 1 clove garlic, minced
- 1/2 tsp. salt
- 1/4 tsp. freshly ground black pepper
- Italian Meatloaf
- 1/4 cup chopped mushrooms
- 1/4 cup pasta sauce
- 2 Tbsp. chopped fresh basil
- Parmesan cheese
- Greek Meatloaf
- 2 Tbsp. chopped Kalamata olives
- 1/4 tsp. dried oregano
- 1/2 cup Feta cheese
Instructions
- Preheat oven to 350°.
- In a large bowl, combine ground beef, bread crumbs, onion, milk, egg, garlic, salt and pepper. Divide mixture into two separate bowls.
- Italian Meatloaf
- Add mushrooms, pasta sauce and basil to meat mixture. Divide mixture into 6 muffin tin cups, patting lightly to level. Bake 22 to 24 minutes. Top with Parmesan and serve with extra pasta sauce.
- Greek Meatloaf
- Add olives and oregano to meat mixture. Divide mixture into 6 muffin tin cups. Bake 22 to 24 minutes. Top with Feta cheese and serve with tzatziki sauce.
