Bacon Brown Sugar Pork Loin

In charge of the main course for Easter this year? Make Bacon Brown Sugar Pork Loin! It’s full of flavor and incredibly easy to make.

Ingredients

  • 3 Tbsp. brown sugar
  • 2 tsp. salt
  • 1/2 tsp. paprika
  • 1/4 tsp. cayenne pepper
  • 1 (1 1/2 lbs.) pork tenderloin, trimmed
  • 8 slices bacon
  • 1 Tbsp. canola oil
  • 1/4 cup apricot preserves
  • 1 Tbsp. whole grain mustard
  • 1 Tbsp. Dijon mustard

Instructions

  1. Preheat oven to 350°.
  2. In a small bowl, combine brown sugar, salt, paprika and cayenne. Rub mixture into the pork. Wrap the tenderloin with bacon, securing with toothpicks.
  3. In a large cast iron skillet, heat oil over medium-high heat. Add tenderloin and sear for 6 to 8 minutes. Flip and sear other side until brown.
  4. In a small bowl, combine preserves and mustards. Brush over top the tenderloin. Transfer skillet to oven and cook about 10 to 14 minutes. Let rest about 10 minutes before slicing and serving.
