Grilled Corn Salad
Need a flavorful side dish for Memorial Day? Make Grilled Corn Salad, topped with lime juice and feta cheese.
Ingredients
- 6-7 ears fresh corn, shucked
- 1 cup diced red bell pepper
- 3/4 cup chopped green onion
- 1 jalapeño, seeded and chopped
- 1/2 cup chopped cilantro
- 1/4 cup mayonnaise
- 2 Tbsp. sour cream
- 2 Tbsp. lime juice
- 1/2 tsp. paprika
- 1/2 tsp. salt
- 1/4 tsp. freshly ground black pepper
- 1/2 cup crumbled feta cheese
Instructions
- Preheat grill to high heat.
- Grill corn about 2 minutes per side. Remove from grill and let cool. Cut corn off into a large bowl. Add bell pepper, green onion, jalapeño and cilantro to corn and stir to combine.
- In a small bowl, whisk together mayonnaise, sour cream, lime juice, paprika, salt and pepper. Add to corn mixture and toss to coat. Stir in cheese, then serve.
