Make-Ahead Breakfast Sandwiches

Pressed for time in the mornings? Prep Make-Ahead Breakfast Sandwiches (complete with egg, ham and cheese) for the kids to re-heat before school!

Ingredients

  • 6 eggs
  • 1/2 tsp. salt, divided
  • 1/2 tsp. freshly ground black pepper, divided
  • 6 English muffins, split in half
  • 12 slices ham or Canadian bacon, divided
  • 6 slices Cheddar or American cheese, divided

Instructions

  1. Preheat oven to 375°.
  2. Crack eggs into a muffin tin sprayed with nonstick cooking spray. Beat each egg slightly and season with salt and pepper. Cook about 12 to 14 minutes.
  3. Place one egg onto each muffin bottom. Top each with 2 slices ham and 1 slice cheese. Top with other muffin half. Wrap each sandwich tightly with plastic wrap and place in freezer.
  4. To reheat, remove plastic wrap from sandwich and wrap in a paper towel. Heat in microwave for 1 to 2 minutes, until heated through completely.
