Candy Cane Snowball Cookies

Celebrate National Cookie Day this Wednesday with a fun wintry dessert: Candy Cane Snowball Cookies.

Ingredients

  • 4 sticks butter, softened
  • 1 cup confectioners’ sugar
  • 1 1/2 tsp. vanilla
  • 3 1/2 cups flour
  • 1 cup chopped pecans
  • 8 oz. white candy coating
  • 1/2 cup crushed candy canes

Instructions

  1. In a large bowl, beat together butter and sugar, until light and fluffy. Mix in vanilla, then gradually beat in flour. Stir in pecans. Cover and refrigerate about 3 to 4 hours.
  2. Preheat oven to 350°.
  3. Remove dough from fridge, shape into 1-inch balls and place on ungreased baking sheets. Bake about 15 minutes. Remove from oven and let cool.
  4. In a small bowl, melt candy coating. In another small bowl, add crushed candy canes. Dip the tops of the cookies into candy coating, then candy canes. Let set.
