Quinoa Bites
Quinoa Bites are done in less than 30 minutes, start to finish!
Ingredients
- 1 cup cooked quinoa
- 1 cup dry oats
- 1/2 cup raisins
- 1/2 cup coconut flakes
- 1/2 tsp. cinnamon
- 2 Tbsp. brown sugar
- 1/4 tsp. salt
- 2 eggs
- 1/2 cup semisweet chocolate chips
Instructions
- Preheat oven to 350º.
- In a large mixing bowl, add quinoa, oats, raisins and coconut flakes. In a separate small bowl, combine cinnamon, sugar and salt. Add spice mixture to the quinoa mixture. Once combined add eggs, and mix until combined.
- Scoop 1-inch balls onto a sprayed baking sheet. Bake for 15 to 20 minutes. Melt chocolate in microwave until smooth. Let quinoa bites cool and dip in melted chocolate.
