Quinoa Bites

Quinoa Bites are done in less than 30 minutes, start to finish!

Ingredients

  • 1 cup cooked quinoa
  • 1 cup dry oats
  • 1/2 cup raisins
  • 1/2 cup coconut flakes
  • 1/2 tsp. cinnamon
  • 2 Tbsp. brown sugar
  • 1/4 tsp. salt
  • 2 eggs
  • 1/2 cup semisweet chocolate chips

Instructions

  1. Preheat oven to 350º.
  2. In a large mixing bowl, add quinoa, oats, raisins and coconut flakes. In a separate small bowl, combine cinnamon, sugar and salt. Add spice mixture to the quinoa mixture. Once combined add eggs, and mix until combined.
  3. Scoop 1-inch balls onto a sprayed baking sheet. Bake for 15 to 20 minutes. Melt chocolate in microwave until smooth. Let quinoa bites cool and dip in melted chocolate.
