Butternut Squash Sausage Pasta

We have the perfect comfort meal that’s great for dinner on a cold winter night. Packed full of flavor with veggies and Sparkle sausage, this is sure to be a new family favorite dinner.

To make Butternut Squash Sausage Pasta, you’ll need 1 butternut squash, peeled, seeded and cubed, 1 pound of Sparkle sausage, 3 tablespoons of olive oil, divided, 1 teaspoon of salt, 1 teaspoon of freshly ground black pepper, 4 cloves of minced garlic, 6 ounces of spinach, 1 cup of heavy whipping cream, ½ of a cup of shredded Parmesan cheese and 8 ounces of your favorite pasta.

Preheat your oven to 425º. Add butternut squash to a baking sheet. Coat with 1 tablespoon of olive oil, salt and pepper. Roast for 20 minutes and remove from oven. Meanwhile, cook pasta according to package directions until al dente.

While the butternut squash and pasta are cooking, in a large skillet, heat 1 tablespoon of olive oil on medium heat. Add sausage and brown until cooked through. Remove from pan into a bowl, set aside.

Add remaining olive oil, garlic and spinach to skillet and cook on medium heat for 5 minutes until spinach starts to wilt. Add heavy cream. Bring to a boil then immediately reduce to simmer. Add Parmesan cheese. Keep stirring until cheese is fully melted. Add sausage back in and warm through. Stir in the cooked pasta and roasted butternut squash until everything is coated in sauce and serve.
