Energy Bars
For a healthy snack, make Energy Bars – complete with dried fruit and seeds.
Ingredients
- 1 1/2 cups prunes
- 1/2 cup dates
- 1 cup chopped almonds, divided
- 2 Tbsp. sunflower seeds
- 2 Tbsp. pumpkin seeds
- 1/2 cup dried cranberries
Instructions
- Place plums, dates and 1/2 cup almonds in food processor. Pulse until the mixture becomes a sticky paste.
- Transfer paste to a medium bowl and add remaining 1/2 cup almonds, seeds and cranberries. Mix until combined. Spoon mixture into an 8 x 8-inch pan lined with parchment and press down firmly.
- Place in freezer for about 1 hour, then slice into 10 bars.
