Leftover Ham and Cheese Tortellini

Leftover Ham and Cheese Tortellini

If you’re left with lots of leftover ham after the holidays, use it to make Leftover Ham and Cheese Tortellini for dinner!

Ingredients

  • 1 Tbsp. olive oil
  • 1/4 cup minced shallot
  • 3 cloves garlic, minced
  • 1/2 lb. leftover ham, chopped
  • 1 1/2 lbs. cheese tortellini
  • 2 cups frozen peas
  • 3/4 cup low-sodium chicken broth
  • 1/3 cup heavy cream
  • 1/2 tsp. freshly ground black pepper
  • 1 cup shredded Swiss cheese
  • 1/2 cup grated Parmesan cheese

Instructions

  1. In a large skillet over medium-high heat, heat oil. Add shallot and garlic and cook about 3 minutes, until soft. Add ham and cook until crispy, about 5 minutes. Stir in tortellini and peas. Add chicken broth and let simmer until tortellini are cooked, about 7 minutes.
  2. Add heavy cream, pepper, Swiss cheese and Parmesan cheese. Stir and let cook until creamy.
