Leftover Ham and Cheese Tortellini
If you’re left with lots of leftover ham after the holidays, use it to make Leftover Ham and Cheese Tortellini for dinner!
Ingredients
- 1 Tbsp. olive oil
- 1/4 cup minced shallot
- 3 cloves garlic, minced
- 1/2 lb. leftover ham, chopped
- 1 1/2 lbs. cheese tortellini
- 2 cups frozen peas
- 3/4 cup low-sodium chicken broth
- 1/3 cup heavy cream
- 1/2 tsp. freshly ground black pepper
- 1 cup shredded Swiss cheese
- 1/2 cup grated Parmesan cheese
Instructions
- In a large skillet over medium-high heat, heat oil. Add shallot and garlic and cook about 3 minutes, until soft. Add ham and cook until crispy, about 5 minutes. Stir in tortellini and peas. Add chicken broth and let simmer until tortellini are cooked, about 7 minutes.
- Add heavy cream, pepper, Swiss cheese and Parmesan cheese. Stir and let cook until creamy.
