Peach Cobbler
Peach Cobbler is also on the menu this week. It’s easier than you think; the oven does all of the work!
Ingredients
- 6 peaches, cut into 1/2-inch wedges
- 1/4 tsp. cinnamon
- 1/2 cup sugar, divided
- 1 1/4 cups plus 2 Tbsp. all-purpose flour
- 6 Tbsp. unsalted butter, cut into pieces
- 1 tsp. baking powder
- 1/4 tsp. salt
- 1 tsp. vanilla
- 2/3 cup heavy cream
- Vanilla ice cream for serving
Instructions
- Preheat oven to 350°.
- In a bowl, toss peaches, cinnamon, 1/4 cup sugar and 2 tablespoons flour. Transfer mixture to an 8-inch square
- baking dish. In a food processor, combine remaining 1 1/4 cups flour, remaining 1/4 cup sugar, butter,
- baking powder and salt. Pulse until coarse crumbs form. Add vanilla and cream and pulse just until
- moistened. Drop spoonfuls of batter onto peaches.
- Place baking dish on a rimmed baking sheet and bake until golden brown and bubbly, 50 to 60 minutes.
- Serve with vanilla ice cream.
