Peach Cobbler

Peach Cobbler is also on the menu this week. It’s easier than you think; the oven does all of the work!

Ingredients

  • 6 peaches, cut into 1/2-inch wedges
  • 1/4 tsp. cinnamon
  • 1/2 cup sugar, divided
  • 1 1/4 cups plus 2 Tbsp. all-purpose flour
  • 6 Tbsp. unsalted butter, cut into pieces
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 1 tsp. vanilla
  • 2/3 cup heavy cream
  • Vanilla ice cream for serving

Instructions

  1. Preheat oven to 350°.
  2. In a bowl, toss peaches, cinnamon, 1/4 cup sugar and 2 tablespoons flour. Transfer mixture to an 8-inch square
  3. baking dish. In a food processor, combine remaining 1 1/4 cups flour, remaining 1/4 cup sugar, butter,
  4. baking powder and salt. Pulse until coarse crumbs form. Add vanilla and cream and pulse just until
  5. moistened. Drop spoonfuls of batter onto peaches.
  6. Place baking dish on a rimmed baking sheet and bake until golden brown and bubbly, 50 to 60 minutes.
  7. Serve with vanilla ice cream.
