Peach Pecan Muffins

Ingredients

Crumble Topping

  • 1/2 cup chopped pecans
  • 1/3 cup brown sugar
  • 1/4 cup flour
  • 1 tsp. ground cinnamon
  • 1/4 tsp. nutmeg
  • 2 Tbsp. butter, melted

Peach Muffins

  • 1 1/2 cups flour
  • 1/2 cup sugar
  • 2 tsp. baking powder
  • 1 tsp. ground cinnamon
  • 1/4 tsp. salt
  • 1 stick butter, melted
  • 1/4 cup milk
  • 1 tsp. vanilla
  • 1 egg
  • 2 peaches, peeled and diced

Instructions

Crumble Topping

  1. In a medium bowl, combine pecans, brown sugar, flour, cinnamon, nutmeg and melted butter. Set aside.

Peach Muffins

  1. Preheat oven to 400°.
  2. In a large bowl, combine flour, sugar, baking powder, cinnamon and salt. In a separate bowl, whisk together butter, milk, vanilla and egg. Add wet mixture to dry ingredients and stir until moistened. Fold in peaches.
  3. Spoon mixture evenly into muffin tins lined with cupcake wrappers. Sprinkle each with crumble topping and bake 20 to 25 minutes.
