Stir Fried Chicken and Broccoli
Skip the takeout tonight and instead make Stir Fried Chicken and Broccoli! It’s inexpensive and takes little to no time to make.
Ingredients
- 1 lb. boneless skinless chicken breasts, cut into 1-inch pieces
- 3 cloves garlic, minced
- 2 tsp. finely chopped ginger
- 1 cup chicken broth, divided
- 4 Tbsp. soy sauce
- 2 tsp. sugar
- 2 cups broccoli florets
- 1/2 cup chopped green onion
- 1 cup sliced mushrooms
- 2 tsp. cornstarch
Instructions
- In a large skillet or Wok, sauté chicken in oil until browned. Add garlic and ginger; cook 1 minute more. Add 3/4 cup broth, soy sauce and sugar.
- Cover and cook over medium heat 5 minutes. Add broccoli, onion and mushrooms; cover and cook about 5 minutes more, stirring occasionally, until chicken is no longer pink and broccoli crisp-tender.
- In a small bowl, mix cornstarch with remaining broth; stir into chicken mixture. Cook, stirring frequently, until sauce is thickened.
