Lemon Butter Chicken Breasts

For a cheap weeknight dinner, make Lemon Butter Chicken Breasts. Serve with rice and broccoli for a complete meal.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/3 cup all-purpose flour
  • 1/2 tsp. salt
  • 1/4 tsp. freshly ground black pepper
  • 1/4 tsp. garlic powder
  • 2 Tbsp. lemon zest
  • 5 Tbsp. butter
  • 2 lemons, sliced
  • 2 Tbsp. freshly squeezed lemon juice

Instructions

  1. In a shallow bowl, combine flour, salt, pepper, garlic powder and lemon zest. Coat chicken breasts with flour mixture.
  2. In a large skillet, melt butter and cook chicken over medium-high heat for 3 minutes on each side. Remove chicken and set aside. Add lemon slices to skillet, cook until lightly brown for 2 to 3 minutes. Return chicken to skillet and add lemon juice. Cook for additional 2 to 3 minutes. Serve immediately with rice or pasta.
