Avocado Salad
For a simple, delicious and healthy spring salad, make Avocado Salad– complete with fresh avocados, corn, beans and tomatoes.
Ingredients
- 2 avocados, peeled, pitted and diced
- 1 (15 oz.) can black beans, drained and rinsed
- 1 (14.5 oz.) can corn, drained
- 1 (10 oz.) can diced tomatoes with green chilies
- 1/4 cup finely chopped green onion
- 1/4 cup freshly chopped cilantro
- 1 Tbsp. lime juice
- 1/4 tsp. salt
Instructions
- In a medium bowl, mix avocados, black beans, corn, tomatoes, onions, cilantro, lime juice and salt. Stir and serve with tortilla chips.
