Thai Peanut Chicken Slaw Salad

Ingredients

  • 1/2 cup peanut butter
  • 2 Tbsp. soy sauce
  • 1/2 Tbsp. minced ginger
  • 1 clove garlic, minced
  • 2 Tbsp. rice vinegar
  • 1/2 tsp. Sriracha sauce
  • 1/2 tsp. maple syrup
  • 1/3 cup water
  • 4 cups coleslaw mix
  • 1 cup shredded carrots
  • 1/2 cup chopped green onion
  • 1/2 cup chopped red bell pepper
  • 1 seedless cucumber, chopped
  • 1/3 cup chopped cilantro
  • 1 1/2 cups shredded chicken
  • 1/2 cup chopped peanuts

Instructions

  1. In a small bowl, whisk together peanut butter, soy sauce, ginger, garlic, rice vinegar, Sriracha and maple syrup. Slowly whisk in water until desired consistency is reached. Set aside.
  2. In a large bowl, toss together coleslaw mix, carrots, green onion, bell pepper, cucumber, cilantro and chicken. Pour peanut sauce overtop and toss to coat. Top with chopped peanuts and serve.
