Banana Oat Chocolate Chip Cookies

Ingredients
- 1 3/4 cups whole wheat or oat flour
- 1 1/2 cups oats
- 2/3 cup sugar
- 1/2 tsp. salt
- 1/2 tsp. baking soda
- 1 Tbsp. ground flax seed
- 5 Tbsp. butter, softened
- 2 ripe bananas, mashed
- 1 egg
- 1 tsp. vanilla
- 1/2 cup dark chocolate chips
- 1/2 cup pecans, chopped
Instructions
- Preheat oven to 350º.
- In a bowl, combine flour, oats, sugar, salt, baking soda and ground flax seed. Add butter and combine until the mixture has the consistency of coarse crumbs. In a separate bowl, mix bananas, egg and vanilla until combined and add to dry mixture. Stir in chocolate chips and pecans.
- Drop mixture in tablespoons, about 1-inch apart on cookie sheet coated with nonstick cooking spray. Bake for 10 to 12 minutes. Makes 3 dozen.
