Peanut Butter Thai Tacos
This Taco Tuesday, ditch the typical Mexican tacos and make Peanut Butter Thai Tacos instead. They’re the perfect combination of tangy, spicy and sweet.
Ingredients
- 4 boneless, skinless chicken breasts
- 3 cloves garlic, minced
- 3 Tbsp. soy sauce, divided
- 2 Tbsp. rice vinegar
- 1 Tbsp. sesame oil
- 1 tsp. fish sauce, optional
- 1 cup coleslaw mix
- 2/3 cup finely sliced red bell pepper
- 2 Tbsp. lime juice
- 1/2 cup creamy peanut butter
- 2 Tbsp. Sriracha sauce
- 10 small flour tortillas, warmed
- 1/4 cup chopped cilantro
Instructions
- In a large resealable plastic bag, combine garlic,
- Tbsp. soy sauce, rice vinegar, sesame oil and fish sauce. Add chicken and marinate for 30 minutes to overnight.
- Remove chicken from marinade and grill or sauté until cooked through; slice or shred chicken.
- Meanwhile, in a medium bowl, combine coleslaw mix and bell pepper. Toss with lime juice. In a small bowl, mix together peanut butter and Sriracha sauce.
- To assemble tacos, add chicken to tortillas, top with coleslaw mix, drizzle Sriracha peanut butter sauce on top and sprinkle with chopped cilantro.
