Peanut Butter Thai Tacos

This Taco Tuesday, ditch the typical Mexican tacos and make Peanut Butter Thai Tacos instead. They’re the perfect combination of tangy, spicy and sweet.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 3 cloves garlic, minced
  • 3 Tbsp. soy sauce, divided
  • 2 Tbsp. rice vinegar
  • 1 Tbsp. sesame oil
  • 1 tsp. fish sauce, optional
  • 1 cup coleslaw mix
  • 2/3 cup finely sliced red bell pepper
  • 2 Tbsp. lime juice
  • 1/2 cup creamy peanut butter
  • 2 Tbsp. Sriracha sauce
  • 10 small flour tortillas, warmed
  • 1/4 cup chopped cilantro

Instructions

  1. In a large resealable plastic bag, combine garlic,
  2. Tbsp. soy sauce, rice vinegar, sesame oil and fish sauce. Add chicken and marinate for 30 minutes to overnight.
  3. Remove chicken from marinade and grill or sauté until cooked through; slice or shred chicken.
  4. Meanwhile, in a medium bowl, combine coleslaw mix and bell pepper. Toss with lime juice. In a small bowl, mix together peanut butter and Sriracha sauce.
  5. To assemble tacos, add chicken to tortillas, top with coleslaw mix, drizzle Sriracha peanut butter sauce on top and sprinkle with chopped cilantro.
