Smothered Rice Burritos
For your next weeknight dinner, make Smothered Rice Burritos. In this recipe, tortillas are filled with beans and cheese, then topped with a flavorful meat mixture.
Ingredients
- 1 lb. ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup can tomato sauce
- 1 cup salsa
- 1 Tbsp. taco seasoning
- 1 tsp. cumin
- 3 cups shredded Cheddar cheese, divided
- 1 (15 oz.) can refried beans
- 1 cup cooked rice
- 1 tsp. cumin
- 1/2 tsp. garlic powder
- 10 flour tortillas
Instructions
- Preheat oven to 350°.
- In a large skillet, brown hamburger with onion until cooked through. Add garlic and cook 1 minute more. Add tomato sauce, salsa, taco seasoning and cumin. Simmer on low heat while assembling burritos.
- In a large bowl mix together beans, rice, cumin, garlic powder and 2 cups of cheese. Spread rice mixture on each tortilla. Roll up and place seam down in a greased 9 x 13-inch baking dish.
- Top rolled tortillas with meat mixture. Sprinkle remaining cheese overtop. Bake for about 20 minutes
