Meatball Salad

Running out of interesting dinner ideas?  Try this meatball salad recipe, it’s a fun twist on an old classic!

Ingredients

  • 1/2 cup thin pita chip crumbs
  • 5 Tbsp. red wine vinegar, divided
  • 2 Tbsp. olive oil, divided
  • 1/2 onion, chopped
  • 1/4 chopped fresh mint
  • 2 cloves garlic, minced
  • 1 lb. ground beef
  • 1/4 tsp. ground cinnamon
  • 1/4 tsp. salt
  • 1/4 tsp. freshly ground black pepper
  • 1 cup grape tomatoes, halved
  • 1/4 cup Greek yogurt
  • 2 hearts romaine lettuce, chopped
  • 1/2 onion thinly sliced
  • 1 red pepper, thinly sliced

Directions

  1. Preheat broiler to high. Line a rimmed baking sheet with aluminum foil.
  2. In a large bowl, drizzle pita chips with 1 tablespoon each red wine vinegar and olive oil. Add onion, mint, garlic, ground beef, cinnamon, salt and pepper and mix gently with your hands until well combined. Form into 24 small meatballs. Place on the prepared baking sheet. Spread the tomatoes cut-side up in a single layer on the other side of the pan.
  3. Broil meatballs until browned and cooked through and tomatoes are blistered, 4 to 5 minutes. Let cool slightly.
  4. Meanwhile, combine yogurt, remaining vinegar and olive oil to make dressing. Arrange lettuce, pepper and onion on a platter. Top with dressing and season with salt and pepper. Arrange meatballs and tomatoes overtop and serve with mint leaves and pita chips.
