Southwestern Salad

Southwestern Salad is fresh, light and full of protein.

Ingredients

  • 5 cups chopped romaine lettuce
  • 1 cup red quinoa, cooked and chilled
  • 1 (15 oz.) can black beans
  • 1 (15 oz.) can corn
  • 1 cup chopped red pepper
  • 1 tomato, chopped
  • 2 Tbsp. diced red onion
  • 1 avocado, chopped
  • 1/4 (10 oz.) container soft silken tofu, drained
  • 1/4 cup fresh lime juice
  • 2 cloves garlic, minced
  • 1 tsp. mustard
  • 1 tsp. cider vinegar
  • 1/4 cup finely chopped cilantro
  • 1/4 tsp. salt
  • 1/4 tsp. freshly ground black pepper

Instructions

  1. Mix lettuce, quinoa, beans, corn, peppers, tomato and onion in a large bowl. Add avocado slices on top.
  2. Blend tofu, lime juice, garlic, mustard, cider vinegar, cilantro, salt and pepper in a food processor. Sprinkle desired amount of dressing overtop salad mixture.
