Veggie Potato Salad

A perfect addition for labor day weekend cookouts!

What You’ll Need:

  • 1 lb. baby red potatoes
  • 4 Roma tomatoes, sliced
  • 1 cup frozen corn, thawed
  • 1/4 cup fresh basil, chopped
  • 1/4 cup olive oil
  • 3 Tbsp. balsamic vinegar
  • 1 Tbsp. finely chopped shallot
  • 1/2 tsp. Dijon mustard
  • 1 packet Stevia
  • 1/4 tsp. onion powder
  • 1/4 tsp. salt
  • 1/4 tsp. freshly ground black pepper
  • 1/2 cup crumbled feta cheese

Directions:

  1. In a covered medium saucepan, boil potatoes for about 5 minutes or until just tender. Drain and allow to cool. Slice potatoes and arrange on a platter with tomatoes. Sprinkle corn and basil over top.
  2. For the dressing, whisk together oil, vinegar, shallot, mustard, sugar, onion powder, salt and pepper. Pour dressing over potato mixture. Sprinkle salad with feta cheese and serve.
