Asparagus and Sweet Potato Hash with Green Sauce
This recipe is both healthy and full of flavor!
Ingredients
- 3 small sweet potatoes
- 1 lb. asparagus, cut into
- 1-inch pieces
- 3/4 cup chopped green onion
- 1 tsp. salt, divided
- 1/4 tsp. freshly ground black pepper
- 2 Tbsp. olive oil
- 1/2 cup parsley
- 1/2 cup cilantro
- 3 cloves garlic
- 1 shallot
- 1 Tbsp. fresh lemon juice
- 3/4 cup olive oil
- 1/8 cup red wine vinegar
Directions
- Bring a large pot of salted water to a boil. Cook potatoes for 5 to 7 minutes or until slightly soft. Add asparagus to potatoes and cook for an additional 2 minutes; drain.
- Sauté green onions, asparagus, sweet potatoes, 1/4 teaspoon salt and pepper in oil over medium-low heat until tender and browned.
- Meanwhile in a food processor, combine parsley, cilantro, garlic, shallot, lemon juice, olive oil, vinegar and remaining salt.
- Serve hash and top with green sauce.
