Gia Russa Gnocchi with Zucchini Ribbons

Another delicious recipe featuring Gia Russa!

What you’ll need:

  • 1 bag Gia Russa frozen Gnocchi
  • 3 Tbsp. butter
  • 1 Tbsp. Russa chopped garlic
  • 1 large sweet onion, thinly sliced
  • 3 small zucchini, thinly sliced lengthwise
  • 1 pint cherry or grape tomatoes, halved
  • Salt and freshly ground black pepper to taste
  • 1/4 tsp. ground nutmeg
  • 1/2 cup Gia Russa Romano Cheese
  • 1/2 cup chopped fresh parsley

Directions

  1. Cook gnocchi according to package directions.
  2. In large skillet, melt butter on medium high heat. Add onions and cook until butter is starting to brown and onions are caramelized. Add chopped garlic and zucchini until softened. Add nutmeg, tomatoes, salt and pepper and continue cooking, about 1 to 2 minutes.
  3. Stir in Romano cheese and half the parsley. Add the Gnocchi and toss; serve immediately. To garnish, sprinkle additional Romano cheese and remaining parsley flakes.
