French Onion Soup
This soup is rich and flavorful! Add a splash of Worcestershire sauce to the onions if desired.
Ingredients
- 1 Tbsp. olive oil
- 2 cups sweet onion, thinly sliced
- 2 cups red onion, thinly sliced
- 1/4 tsp. sugar
- 1/2 tsp. freshly ground black pepper
- 1/4 tsp. salt
- 1/4 cup dry white wine
- 1 tsp. Worcestershire sauce
- 4 cups low-sodium beef broth
- 1/4 tsp. fresh thyme, chopped
- 4 slices French bread, cut into
- 1-inch cubes
- 4 slices Swiss cheese
Directions
- In a Dutch oven, heat olive oil over medium-high heat. Add onions and sauté for 5 minutes or until tender. Stir in sugar, pepper and salt. Reduce heat to medium; cook for 20 minutes, stirring frequently.
- Increase heat to medium-high and sauté for 5 minutes or until onion is golden brown. Stir in wine and Worcestershire and cook for an additional minute. Add broth and thyme; bring to a boil. Cover, reduce heat and simmer for 2 hours.
- Preheat broiler.
- Place bread evenly on a baking sheet. Broil for 2 minutes or until toasted, turning after 1 minute. Divide bread and soup evenly among oven-proof serving bowls; top each with a slice of cheese. Broil for additional 3 minutes or until cheese begins to brown.
