Coconut Shrimp

Serve this recipe as an appetizer at your next party!

Ingredients

  • 1/3 cup all-purpose flour
  • 1/2 tsp. salt
  • 1/2 tsp. freshly ground black pepper
  • 2 eggs
  • 3/4 cup Panko bread crumbs
  • 1 cup sweetened shredded coconut
  • 1 lb. raw large shrimp, peeled and deveined with tails attached
  • 2 Tbsp. vegetable oil, or as needed
  • sweet chili sauce for serving

Directions

  1. Combine flour, salt and pepper in one bowl. Beat the eggs in a second bowl. Combine bread crumbs and coconut in a third bowl.
  2. Dip shrimp into flour, then eggs and then dredge the shrimp into coconut mixture, pressing gently to adhere.
  3. Add oil to a large skillet on medium heat. Fry shrimp in batches, making sure not to crowd them in the pan. Fry shrimp 2 to 3 minutes on each side or until golden brown. Serve with sweet chili sauce.
