Bacon Wrapped Pineapple
Honey hot sauce is paired with this pleasing appetizer.
Ingredients:
- 10 strips thick-cut smoked bacon
- 20 chunks fresh pineapple
- 3/4 cup packed brown sugar
- 1/4 cup honey
- 2 tsp. Sriracha
- 2 tsp. soy sauce
- 4 tsp. fresh lime juice
- 1 Tbsp. finely sliced fresh cilantro stems
Directions:
- Preheat oven to 400˚.
- Line a sheet pan with foil. Cut bacon strips in half width-wise. Wrap each pineapple chunk with bacon. Place brown sugar on a large plate and roll each bacon wrapped pineapple in brown sugar to coat. If needed, pat more sugar to completely coat rolls.
- Place rolls, seam side down, on the prepared pan. Bake for 20 to 30 minutes or until deep golden brown.
- In a medium bowl combine honey, Sriracha, soy sauce, lime juice and cilantro. Mix well and serve with bacon wrapped pineapple.
