Beet Hummus
Beet Hummus
Ingredients
- 4 medium beets
- 3 cups water
- 2 Tbsp. tahini
- 4 Tbsp. freshly squeezed lemon juice
- 1 Tbsp. lemon zest
- 2 cloves garlic, minced
- 1 Tbsp. ground cumin
- 1/4 tsp. salt
- 1/4 tsp. freshly ground black pepper
- Cucumber slices or pita chips for serving
Instructions
- Cut off the tops of the beets and scrub the roots clean. Place in a saucepan covered with water and simmer until tender, about 30 minutes. Peel beets once they have cooled.
- Place beets, tahini, lemon juice, lemon zest, garlic, cumin, salt and pepper in a food processor and pulse until smooth. Serve with cucumber slices or pita chips.
