Broccoli-Quinoa Pilaf

Broccoli-Quinoa Pilaf

Ingredients

  • 1 Tbsp. olive oil
  • 1 cup chopped onion
  • 3/4 tsp. salt
  • 1/4 tsp. freshly ground black pepper
  • 1 cup quinoa
  • 1 1/2 cups water
  • 2 cups chopped broccoli
  • 1/4 cup raisins
  • 1/2 cup chopped roasted almonds
  • 1/4 cup chopped green onions

Instructions

  1. Heat oil in a medium saucepan over medium-high heat. Add onion and season with salt and pepper. Cook for 3 to 4 minutes, stirring occasionally, until softened and starting to brown.
  2. Add quinoa and water to the saucepan and bring to a boil. Reduce heat to low, cover and simmer for 10 to 12 minutes. Fold in broccoli and raisins. Cover and cook for 8 to 10 minutes, until quinoa and broccoli are tender. Remove from heat and fold in almonds and onions.
