Nectarine Upside-Down Cake
Don’t like nectarines? Use peaches.
Ingredients
- 2 cups all-purpose flour
- 1 cup sugar
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 cup buttermilk
- 1 stick unsalted butter, melted and divided
- 1 tsp. vanilla
- 2 large eggs
- 1/2 cup brown sugar
- 4 nectarines, sliced into 1 1/2-inch thick wedges
Instructions
- Preheat oven to 350º.
- In a large bowl combine flour, sugar, baking soda and salt. In a separate large bowl whisk together buttermilk, 4 tablespoons butter, vanilla and eggs. Pour mixture over dry ingredients and stir.
- Add remaining 4 tablespoons butter to bottom of a 9-inch cake pan, swirling until well coated. Sprinkle brown sugar evenly over melted butter. Arrange nectarine slices on top in a single layer. Scoop batter evenly over nectarines, smoothing out the top.
- Bake for 45 minutes, or until a toothpick inserted comes out clean. Let cool for 5 to 10 minutes. Run knife around the edge of cake and turn upside down onto a serving plate.
