Broccoli and Cheese Dip
If you’re a fan of broccoli cheddar soup, then you’ll love this recipe for Broccoli and Cheese Dip– best served with French bread or warm tortillas.
Ingredients
- 3 Tbsp. olive oil
- 1 1/2 lbs. broccoli, heads cut into 1-inch florets
- 1 clove garlic, minced
- 1 tsp. ground coriander
- 1 tsp. chili powder
- 1 tsp. ground cumin
- 1/4 tsp. dried oregano
- 1/2 tsp. salt
- 1/4 cup cream
- 1/2 cup shredded provolone cheese
- 2 cups shredded Mozzarella cheese
- French bread or warm tortillas for serving
Instructions
- Preheat broiler.
- In a large skillet, heat olive oil. Add broccoli. Cook for 5 minutes over medium-low heat, stirring occasionally, until broccoli is browned. Add garlic and cook for 1 minute. Stir in coriander, chili powder, cumin and oregano. Season with salt and cook for 1 minute. Add cream and cook for about 3 minutes, until broccoli is tender and heated through. Add half the cheeses and stir.
- Transfer mixture to a prepared baking dish and top with remaining cheese. Broil for 5 to 6 minutes or until cheese is melted and browned. Serve with bread or tortillas.
