Potato Skin Bites

Potato Skin Bites

Ingredients

  • 3 russet potatoes, washed
  • 2 Tbsp. olive oil
  • 1/2 tsp. salt
  • 1/4 tsp. freshly ground black pepper
  • Pinch cayenne pepper
  • 1 tsp. garlic powder
  • 1/2 tsp. onion powder
  • 8 slices bacon, cooked and crumbled
  • 1 1/2 cups shredded cheddar
  • 1/3 cup chopped green onions
  • Sour cream for serving

Instructions

  1. Preheat oven to 400°.
  2. Slice potatoes into 1/2″ rounds.
  3. In large bowl, toss potato rounds in olive oil. Season with salt, pepper, cayenne, garlic powder and onion powder. Toss until evenly coated. Place in a single layer on baking sheet. Bake 30-40 minutes.
  4. Top each potato round with cheese and bacon. Broil until melty.
  5. Dollop sour cream onto each potato and garnish with green onion.
