Southwest Meatloaf
We are starting the week with a little kick. Southwest meatloaf is filled with hot sauce, smoked paprika, onion and peppers!
Ingredients
- 1 Tbsp. olive oil
- 2 cloves garlic, minced
- 1 green pepper, chopped
- 1 red pepper, chopped
- 1 red onion, chopped
- 1 1/2 lbs. ground beef
- 1 egg, whisked
- 3/4 cup almond flour or breadcrumbs
- 2 Tbsp. hot sauce
- 1 Tbsp. chili powder
- 1 tsp. smoked paprika
- 1 tsp. cumin
- 1/2 tsp. salt
- 1/4 tsp. freshly ground black pepper
Instructions
- Preheat oven to 400º.
- Heat a large skillet over medium-high heat and add olive oil and garlic. Once garlic becomes fragrant, add peppers and onions. Cook until onions are translucent then remove from heat.
- In a large bowl, mix together beef, egg, flour or breadcrumbs, hot sauce, chili powder, paprika, cumin, salt and pepper. Add cooked veggies and mix to combine.
- Place meat mixture in two bread loaf pans. Bake for 30 to 35 minutes.
