Veggie Pasta Salad

Veggie Pasta Salad

Need a side dish for your upcoming cookout or picnic? Make Veggie Pasta Salad! This vegetarian dish is filled with a variety of fresh vegetables and flavor.

Ingredients

  • 1/2 cup plain Greek yogurt
  • 1/4 cup mayonnaise
  • 1/4 cup buttermilk
  • 2 Tbsp. white balsamic vinegar
  • 1 Tbsp. olive oil
  • 1 tsp. hot sauce
  • 1/4 tsp. crushed red pepper flakes
  • 1/2 tsp. salt
  • 1 lb. pasta
  • 2 cups cooked shredded chicken
  • 1 pint cherry tomatoes, cut in half
  • 2 peaches, diced
  • 1 1/2 cups corn
  • 3 cups arugula or spinach
  • 4 hard-boiled eggs, diced
  • 8 oz. Mozzarella balls, cut in half
  • 1/2 cup sunflower seeds
  • 1/2 cup sliced almonds

Instructions

  1. Whisk together yogurt, mayonnaise, buttermilk, white wine vinegar, olive oil, hot sauce, crushed red pepper and salt. Set aside.
  2. Bring a large pot of salted water to a boil, add pasta and cook until al dente. Drain and set aside.
  3. Toss pasta, chicken, tomatoes, peaches, corn, arugula, eggs, cheese, sunflower seeds and almonds in a large bowl. Drizzle dressing on top and toss to coat. Season to taste with salt and pepper.
