Carrot Cake Oatmeal
Need an easy morning pick-up? This carrot cake oatmeal can be made the night before and will keep you going all day long. Best of all, it tastes just like carrot cake!
Ingredients
- 3/4 cup almond milk, original or unsweetened
- 1/2 cup nonfat plain Greek yogurt
- 1/2 cup grated carrot
- 1/4 tsp. salt
- 1 tsp. cinnamon, divided
- 1/2 tsp. apple pie spice
- 2 Tbsp. baking stevia
- 1 1/4 cup old-fashioned oats
- 2 tsp. chia seeds
- 2 Tbsp. pecans, chopped
- 2 Tbsp. maple syrup
Instructions
- In a small bowl, mix almond milk, yogurt, carrot, salt, 1/2 teaspoon cinnamon, apple pie spice, stevia, oats and chia seeds. Divide between 2 small cups or jars. Cover and refrigerate overnight, or at least one hour.
- Before serving, top with pecans, remaining cinnamon and syrup. Serve cold or microwave for 40 seconds to warm.
