Iced Oatmeal Cookies

Iced Oatmeal Cookies

Prepare these iced oatmeal cookies the night before and bake them the day of your event for an easy dessert. Omit the icing for an even healthier option.

Ingredients

  • 2 Tbsp. flaxseed meal
  • 3 Tbsp. water
  • 1 cup whole wheat flour
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1 tsp. ground cinnamon
  • 2 Tbsp. butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup sugar
  • 1/4 cup applesauce
  • 2 tsp. vanilla extract
  • 1 1/2 cups old-fashioned oats
  • 1/2 cup dried cranberries
  • 3/4 cup confectioners’ sugar
  • 2 Tbsp. lemon juice

Instructions

  1. Stir flaxseed meal and water in small bowl. Set aside. In a large bowl, whisk together flour, baking powder, baking soda, salt and cinnamon. Set aside.
  2. Mix butter, brown sugar and sugar in a large bowl with an electric mixer for 1 to 2 minutes, or until light and fluffy. Add flaxseed mixture, applesauce and vanilla, mix until smooth. Slowly add flour mixture. Stir in oats and dried cranberries until combined. Cover and chill for 2 hours or overnight.
  3. Preheat oven to 350°.
  4. Spray baking sheet with cooking spray. Roll cookie dough mixture into rounds and place 2 inches apart. Bake for 10 to 12 minutes, or until just beginning to brown.
  5. Meanwhile, whisk together confectioners’ sugar and lemon juice in a small bowl, until smooth. Icing should be thick, but spreadable. Gently brush icing on hot cookies. Cool for 5 minutes, then transfer to a wire rack to cool completely.
