Orange Honey Whole Roasted Chicken

We are making three light and refreshing Spring meals! Orange honey chicken is served with carrots and beans. To save time, you can purchase the already cooked whole fryer chicken at Sparkle Markets.

Ingredients

  • 4-5 lb. whole fryer chicken
  • 1 orange, quartered
  • 1 small onion, cut into wedges
  • 2 Tbsp. butter, melted
  • 1/2 tsp. salt
  • 1/2 tsp. freshly ground black pepper
  • 1 cup honey, divided
  • 1 Tbsp. orange zest
  • 1/2 cup sliced shallots
  • 1/2 cup champagne
  • 1/2 cup orange juice
  • 1/2 cup chicken broth
  • 1 cup green beans
  • 1 cup carrots, chopped
  • 1/2 orange, thinly sliced

Instructions

  1. Preheat oven to 375º.
  2. Rinse chicken cavity and dry with paper towels. Stuff inside of chicken with orange and onion. Place chicken in a shallow roasting pan. Brush with butter and sprinkle with salt and pepper.
  3. Roast, uncovered for 1 1/2 to 2 hours or until chicken is cooked through. Brush with 1/2 cup honey and sprinkle with orange zest. Roast chicken for 5 more minutes. Remove chicken from pan and tent with foil.
  4. On the stove top, add shallots, champagne, orange juice, chicken broth, remaining honey, green beans and carrots in a large pan over medium-high heat. Simmer for 12 minutes. Add orange slices. Simmer for 3 to 5 minutes or until heated through. Serve mixture with chicken.
