Sparkle Pasta Fagioli
This homemade recipe is from Sparkle owner, Tony Modarelli. This is an Italian favorite; you won’t want to miss.
Ingredients
- 1 Tbsp. olive oil
- 1 clove garlic, minced
- 5 leaves fresh basil, cut in half
- 1/2 tsp. fresh oregano, divided
- 1 Tbsp. hot Hungarian paprika
- 1 (28 oz.) can tomato sauce
- 1 (15 oz.) can navy, cannellini or great northern beans, rinsed and drained
- 1/2 lb. Padre Hats or Campanella macaroni pasta
- Romano cheese for serving
Instructions
- Heat olive oil in a small saucepan over low to medium heat. Add garlic, half of basil and 1/4 teaspoon oregano. Let cook until garlic starts to brown and then sprinkle in paprika. Let cook for 5 to 10 seconds or until it starts to change color. Do not over cook paprika; it will burn quickly. Add tomato sauce and let simmer for 10 to 15 minutes.
- Meanwhile cook pasta according to package directions, reserving 1/4 to 1/2 cup water in pan. Add beans to tomato sauce. Add sauce to pasta and mix together. Transfer into a serving dish and sprinkle with cheese.
