Spinach Cheese Stuffed London Broil
Impress your family and friends with this Spinach Cheese Stuffed London Broil. It’s stuffed with blue cheese, roasted red pepper filling and spinach.
Ingredients
- 1 1/2 to 2 lbs. London Broil
- 1 (10 oz.) package frozen chopped spinach, thawed
- 1/2 cup crumbled blue cheese
- 1 (7 oz.) jar roasted red peppers, drained and chopped
- 3 Tbsp. seasoned bread crumbs
- 1 egg
- 3/4 tsp. garlic salt, divided
- 3/4 tsp. freshly ground black pepper, divided
- 1 Tbsp. olive oil
Instructions
- Preheat oven to 425º.
- Slice London Broil in half, parallel to work surface and starting at a long side, without cutting all the way through. Open London Broil and flatten slightly to an even thickness.
- In medium bowl, combine spinach, cheese, peppers, bread crumbs, egg, 1/4 teaspoon garlic salt and 1/4 teaspoon pepper. Press filling onto London Broil, leaving a 1-inch border on all sides. Roll up London Broil to enclose filling, beginning on short side. Tie London Broil with cotton twine at 2-inch intervals to secure. Rub outside with oil, then sprinkle with remaining garlic salt and pepper. Roast for 35 minutes, then increase heat to broil and broil for 10 minutes, turning once. Let meat rest 15 minutes. Remove twine, slice and serve.
